CLINTON — A new restaurant recently opened in Clinton at the site of what was formerly Hillbilly Jack’s Barbeque.
Cuatlatl’s Family Kitchen opened in August. The restaurant is located at 1516 Camanche Ave., in Clinton. Cuatlatl’s Family Kitchen is open daily. Hours are 6 a.m. to 3 p.m. Sunday through Wednesday. They are open 6 a.m. to 9 p.m. on Thursday through Saturday. Restaurant Owner Carrie Cuatlatl said they serve American style food but have dishes with spicy twists to them.
“It’s me, my husband, my brother-in-law and his wife,” Cuatlatl said. “And we’ve all worked in the restaurant industry some way or form. So we’ve talked about it for years about opening a place to work for ourselves and not someone else. We’ve attempted it a couple times but it fell through. And then when this came up it was like really fast. We heard about it, set the date to come look at it and then we’re like ‘OK, well we’ll give you this much as a down payment right now.’”
Cuatlatl said the number of customers varies by day.
“It varies but doing the all you can eat Frontier style fried cod has made it a lot busier on those days,” Cuatlatl said. “We have those Thursdays, Fridays and Saturdays. And then Sundays have been getting a lot busier too.”
Cuatlatl said they did not change much about the inside of the building for Cuatlatl’s Family Kitchen except changing the colors of the paint on the walls. She said they have specials on Thursdays, Fridays and Saturdays. They also offer some Hillbilly Jack’s Barbeque. Cuatlatl added the restaurant’s homemade ranch is a popular item.
